The culinary balance is achieved through the combination of soft courgettes and spring onions sautéed in olive oil, contrasted with a room-temperature salsa of ripe tomatoes, garlic, and basil. Allowing the tomatoes to rest for at least 20 minutes is crucial, as it enhances their flavor by releasing their juices.
Using a variety of tomatoes, like cherry and firmer types, introduces both sweetness and texture to the dish. Opt for smaller courgettes for their delicate flavor, and finish with fresh basil for a fragrant touch.
